Recipe 31: Cucumber Salad. This one is of my own design as I have been unhappy with the non-cream based recipes. Very similar to one I did 6 years ago.
4 Cucumbers, sliced lengthwise, seeded, sliced thin
1/2 large red onion, sliced thin (#2 on my mandolin)
Combine in colander and mix in with 1 1/2 tbl salt; let sit for 20 minutes.
In a small bowl combine:1 tsp sugar1 1/2 tbl white wine vinegar1 1/2 tbl sherry vinegar (or 3 tbl of one or the other)
After sugar dissolves, add 4 minced garlic cloves (or put through the garlic press)
Press cucumber/onion mixture to get as much moisture out.
Combine all ingredients in bowl.
Add 1 tbl of dried dill weed, toss to combine.
Serve right away or chill for 1 hour (or overnight)
It gets stronger the longer it sits. Liberally use breath mints after eating.
